Pumpkin Spice Apple Crisp!

Happy Sunday! Since everyone has an extra hour today, try making this gluten free Pumpkin Spice Apple Crisp! I used Trader Joe’s GF Pumpkin Spice Pancake Mix for the topping and it came out perfect!




The recipe is entirely gluten free, but can be made dairy free or Vegan  if you don’t use the pancake mix (it contains buttermilk). I suggest doubling the almond flour and the seasonings (cinnamon, nutmeg and ginger) plus adding a dash of ground cloves. Recipe below: 
Pumpkin Spice Apple Crisp
Ingredients:
5 Granny Smith apples, peeled, cored and chopped 
1 juiced lemon
1/2 lemon zest
1 tbsp maple syrup 
2 tbsp tapioca starch
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg

Topping Ingredients: 
1 cup GF rolled oats (I like Bob’s Red Mill)
1/2 cup almond meal
1/2 cup Trader Joe’s GF Pumpkin Pancake Mix
1/2 cup coconut sugar
1 tbsp maple syrup
1/4 cup melted coconut oil
1 tsp ground cinnamon 
Directions:
1. Preheat oven to 350 degrees. Spray baking pan with coconut oil:
2. Mix apples, lemon juice/zest, starch, 1 tbsp maple syrup, cinnamon, nutmeg and ginger. Pour into pan.
3. Mix all topping ingredients. Crumble on top of apples.
4. Bake in oven for 45 minutes. Broil for an additional 3-4 minutes. Enjoy!
