Healthy Strawberry Oat Muffins

I FINALLY GOT MY HANDS ON SOME WHOLE WHEAT FLOUR!!! Anyone else struggling with finding flour during this pandemic?! I ordered 3 bags when it finally came in stock.

First thing I did with my newfound treasure was make this super Springy and healthy strawberry oat muffin recipe from Cookie & Kate.

While I love making up my own recipes, I’m also always on the lookout for #gutfriendly recipes from other people to share with you! @cookieandkate is one of my favorites for healthified treats. I love this recipe because it uses whole wheat flour, which I feel has gotten a bad rap. While I love using gluten-free alternatives, if you’re able to tolerate whole wheat products then use them! They’re full of fiber and B-vitamins.

The only substitution I did in this recipe was to use avocado oil instead of olive oil and  coconut sugar sprinkled on top in place of raw sugar. If you follow a gluten free diet, you can replace the whole wheat flour with 1:1 baking flour but it won’t pack as much of a fiber punch. I’d recommend eating with extra strawberries and a sprinkle of chia seeds on top to increase your fiber intake.

They also make a great dessert with some vanilla ice cream (which this pregnant girl may or may not have experimented with last night).
