-Breakfast: @minimalistbaker inspired Baked Oatmeal with blueberries and pecans

-Lunch: Smoky Eggplant Tomato Soup

-Dinner: Buddha Bowls with quinoa or acorn squash base, crispy kale, jalapeño chicken sausage, sweet potatoes or red potatoes, chili lime roasted chickpeas and roasted broccoli.
