GUT FRIENDLY SKILLET!
Can you believe I didn’t own a cast iron skillet until last year?! It’s a game changer! This skillet features ground turkey, sweet potatoes and spinach…lots of gut friendly fiber and some protein.
I can’t take all the credit for this delicious skillet though. I was inspired by this recipe from Primavera Kitchen.
I made a few changes to add some extra fiber (spinach) and avoided garlic & onion to keep it low FODMAP friendly. I also added some differerent spices, like Smoked Paprika and Trader Joe’s Chili Lime seasoning blend.
Smokey Ground Turkey, Sweet Potato & Spinach Skillet

Ingredients:

2 tbsp garlic infused olive oil

1lb Organic ground turkey

3 cups sweet potatoes, chopped

4 cups baby spinach

3 tbsp green onion (green parts only)

1/2 tbsp Trader Joe’s Chili Lime Seasoning

1/2 tbsp smoked paprika
-
1 tsp red chili flakes
-
sprinkle of black pepper
-
1/2 cup shredded sharp cheddar cheese
Directions:

In a cast iron skillet, heat the olive oil over medium-high heat.

Add the ground turkey, using a wooden spoon to break it up as it cooks (about 5 minutes).

All chili-lime, smoked paprika and black pepper.

Add in sweet potatoes and chili flakes. Cover and stir occasionally.

While the sweet potatoes are cooking, preheat the oven to 400F.

When the sweet potatoes start to get tender (about 10-15 minutes) add in the spinach and let it cook down. Stir occasionally.

Once spinach has cooked down, added shredded cheddar on top.

Bake in oven for 4-5 minutes.

Garnish with green onions and low FODMAP hot sauce (to taste).
